One thing I love about Robert Rodriguez movies is the Ten Minute Cooking School that he puts on the DVDs. In Once Upon a Time in Mexico, it was puerco pibil, the meal that was shoot-the-cook good. In Sin City, it's breakfast tacos, with a very clear explanation of how to start out. "You take the flour tortillas that you bought at the grocery store out of the fridge, and you throw them away. Those things are like rubber. We're going to make tortillas like my grandmother makes."

The recipe called for half butter, half lard to be cut into the flour. RR said, though, that if his grandmother were making them, she'd use all lard. Well, I don't have lard, but I did have a bunch of solid goose fat that I'd rendered when we made that goose a while back. It's been sitting in the fridge (as long as it's refrigerated, it doesn't go bad), so I thought I'd use it up. Mmmm, goose fat.

So I mixed up the flour, goose fat, a little salt, a little baking powder, rolled out pieces, and made tortillas. They were so good that I made them again the next week. :) It's one of the few things I can use this goose fat in, as the flavor is so strong that it overpowers less spicy dishes. I tried making a pie crust with it, and blech. No way.

I don't want to go back to grocery-store tortillas. These are fun to make, and taste really good.

Btw, if you watch the extras on the Kill Bill Vol.2 dvd, Rodriguez and his band play at the premiere party for the movie. They totally rock!
